Wine of the week: 5th July 2018: la Chablisienne Fourchaume 2015
You know summer has started when the Chablis starts flowing. Nothing beats a hot summers day than a cold Chablis. Here is my wine of the week and a favourite of mine during the summer:
La Chablisienne is a co-op which operates exclusively in Chablis, Bourgogne. They work with growers across the region, who upon harvest will press the juice, as close as possible to the vines, and deliver the juice to La Chablisienne. La Chablisienne, will then do the rest from racking to bottling. I am a huge fan of La Chablisienne, due to the quality along with the price they are able to sell their wine for. Their wines show fantastic precision, citrus notes with minerality and a crisp finish. Everything you would want from a Chablis.
La Chablisienne Fourchaume 2015 is still showing young, however that does not stop you from enjoying this today. Just make sure it is cold enough! Chardonnays in general are best served not too cold, however Chablis is the exception to the rules.
Tasting notes of La Chablisienne Fourchaume 2015:
On the nose I found citrus, pear and white flowers, this lead to a palate which was round with good acidity, however in balance. Citrus tart and ripe pears followed to a solid finish. This wine had excellent complexity and is drinking wonderfully now. Drink now or over the next 3 years.
Chablis is very versatile with food. It is famous with oysters, however not being a fan of oysters, I can promise you there are a lot of other options! Due to it's acidity and minerality, Chablis can be served with a range of fish (Halibut, Bass, salmon etc.) with a citrus or lemon dressing. It can also be served with goats cheese, Sushi or even lobster!
